Could I make a grilled cheese using pancakes? I just took one of my pancake recipes, modified it slightly, then put sharp cheddar cheese in between. Once you flip the pancake, cut slits into the top in 2 or 3 places so the pancake cooks faster. The second side always takes less time to cook than the first side.
