Making sure the coating is thick is the key to these fried eggplant chips

This year we grew baby eggplants, a small variety that produces about lemon sized eggplants. I figured we would waste less this way and after all, they are so stinking cute. Only only are they cute, they taste amazing and are perfect for this fried eggplant chips recipe.
